Mini Cheescakes

6 crushed graham crackers
2 cups goat chevre
1/2 cup sugar (preferably demerera sugar)
2 tsp vanilla extract
chocolate syrup

Preheat oven to 325 degrees. Put 12 cupcake liners in muffin pan. Use a rolling pin to crush the graham crackers. Put 1/2 of a crushed graham cracker in the bottom of each cupcake liner. Beat sugar, egg, vanilla extract and chevre until all mixed together well. Fill each muffin cup with the mixture. Bake for 25-30 minutes until firm. Let sit out for about 20 minutes, then add swirls of chocolate syrup on each mini cheescake. Refrigerate until cold. Serve cold.
