Lamb Roast with Great Northern Beans

1 Three Willows Ranch lamb shoulder
4 garlic cloves whole
2 tsp ground cumin
6 medium russet potatoes, peeled and cut in quarters
3 large carrots peeled, cut in 1/2 lengthwise
1 large onion cut in large pieces
2 cups Great Northern beans, rinsed and strained.

Put the lamb shoulder in crock pot. Add next 5 ingredients and 3-1/2 cups of water. Mix well. Cover crock pot, turn on high for 6 hours. Heat up the beans in a saucepan. Place beans on plates, add the stew on top of the beans with plenty of the liquid.

Salt and pepper to taste
