Lamb or Goat Chops Mint Piquant

Three Willows Ranch grass fed lamb chops
2 TBSP olive oil
1/2 cup fresh mint chopped
5 cloves garlic pressed
1 large cucumber peeled and chopped
2 TBSP apple cider vinegar
1/4 tsp black pepper
cayenne pepper

Mix olive oil, garlic and 1/2 of the mint in a small bowl, and then brush the mixture on the lamb chops. Broil or grill the lamb chops. In another bowl, mix cucumber, apple cider vinegar, a dash of cayenene, black pepper, and salt to taste. Serve the lamb chops with the cucumber, mint piquant sauce on the side.
