Kefir Yogurt

Kefir yogurt can also be made quickly and easily.  After your kefir is ready, and after you have refrigerated it for a while, place your nylon or plastic strainer over a large glass bowl.  Put clean cheesecloth over the strainer and bowl, and pour the kefir on top of the cheesecloth into the strainer.  The kefir will strain through the cheesecloth.  Fold the sides of the cheesecloth over onto the kefir, and place in your refrigerator for 12 hours.  At that point, the kefir yogurt is ready.  It has the consistency similar to Greek yogurt, and it is delicious.  Use a plastic spoon to spoon it into a wide-mouthed pint jar.  It’s ready to eat.  You can substitute it in place of sour cream in recipes or eat it like yogurt.  There are so many ways you can use it.

You can re-use your cheesecloth indefinitely. Put the cheesecloth into a bowl, and wash it with soap and water.  Heat up boiling water.  Put the cheesecloth into a pan, and pour the boiling water over it.  Let it sit for at least 10 minutes so it can sanitize the cheesecloth.  Ring out the water from the cheesecloth, and hang it to dry.  The next time you want to make kefir yogurt, you will need to put the clean cheesecloth into a pan of boiling water again to sanitize it again since it has been exposed to the air.  It’s extremely important to be as sanitary as possible when working with cultures.
