Goat Chili with Cornbread

1 lb. Three Willows Ranch grass fed ground goat
1 medium onion chopped
3 garlic cloves pressed
1 large red bell pepper chopped
1 large green bell pepper chopped
1/4 cup celery chopped
1 14.5-ounce can diced tomatoes
1 15-ounce can red kidney beans
1 TBSP chili powder
1/2 TBSP cumin
1 6-ounce can tomato paste
3 tomato paste cans full of water
1/4 tsp black pepper
1/8 tsp red pepper flakes

In a large pan, saute ground goat, onion, garlic, red pepper, green pepper and celery. When meat has browned, add the rest of the ingredients and stir well. Cover and cook over medium low for 30 minutes. Put in bowls and top with kefir yogurt, chevre or sour cream and grated cheese .Salt to taste.

Cornbread

1 cup spelt flour
1 cup cornmeal
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 cup kefir or kefir yogurt
1 egg
3 TBSP olive oil

Preheat oven to 350 degrees. Oil an 8" or 9" square pan. Combine dry ingredients in a medium sized bowl. Combine wet ingredients in a separate bowl. Stir wet and dry ingredients together until smooth. Pour into the oiled pan. Bake for 20 minutes.
Serve with butter and honey.
