Goat Lasagne with Chevre

1 lb. Three Willows Ranch grass fed ground goat
1 medium onion chopped
3 garlic cloves pressed
1 lb. mozzarella cheese
2 cups chevre
1 15-ounce can tomato sauce
1 TBSP dried basil
1 TBSP dried oregano
(or instead of the basil and oregano use 2 TBSP Italian seasoning)
1/4 tsp ground pepper
1/4 cup fresh chopped parsley
lasagne noodles


Preheat oven to 350 degrees. Cook the lasagne noodles according to directions. While the noodles are cooking, saute the ground goat, onion and garlic in large pan until goat is browned. In a 10"x13" oven proof pan, spread some of the meat sauce on the bottom of the pan. The next layer will be a layer of the lasagne noodles. The next layer will be some of the grated mozzarella cheese. Then add chevre to the next layer. Repeat layers until all ingredients are gone. Bake uncovered for 30 minutes. Salt to taste.
