Goat Fajitas with Rice Espana

1Three Willows Ranch grass fed goat roast
1 large onion sliced
1 large green pepper, sliced in strips
1 large red pepper, sliced in strips
pinto beans
Cook goat roast with 1 cup of water in crock pot on high for 6 hours.  About ½ hour before it is done, grill the vegetables or place under broiler.  Turn the vegetables over a few times while cooking them.  Put the tortillas on the grill or in the oven to warm before serving.  Serve with guacamole, kefir yogurt or sour cream, cilantro, salsa, pinto beans and Rice Espana (recipe below).

Rice Espana

2 TBSP olive oil
1 large onion chopped
2 cloves garlic, pressed
1 large green pepper
2-1/2 tsp dried basil
¾ tsp dried oregano
3 cups uncooked rice
3 large ripe tomatoes, peeled, seeded and chopped
¾ cup pitted and sliced green olives
cayenne pepper (small amount to taste)
fresh parsley chopped
salt and fresh ground pepper to taste
Cook the rice according to directions.  Saute onion, bell pepper, garlic and herbs over medium heat for 10 minutes.  Add the tomatoes, rice, olives, salt and pepper and cayenne pepper.  Put fresh parsley on top.
