Cajun Lamb or Goat Crown Roast with Scalloped Potatoes

Cajun Lamb Roast
Three Willows Ranch grass fed lamb roast
1/2 tsp salt
1/2 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp chili powder
1/4 tsp paprika
5 cloves garlic put through garlic press

Our butcher can cut crown roasts for you if you purchase our grass fed lamb and request a crown roast cut. The meat will be tied with meat strings for this cut.

Marinate the crown roast in the refrigerator all day. Bake at 375 degrees for about 45-50 minutes.

Scalloped Potatoes
4 large potatoes, peeled and sliced about 1/4 inch thick
3 TBSP flour
4 TBSP butter
1/2 cups milk
Salt to taste
Freshly ground pepper

Preheat oven to 350 degrees. Butter or oil a 1-1/2 quart casserole dish. Layer bottom with a single layer of potatoes. Sprinkle salt, pepper, flour and some of the butter. Repeat layers until all potato slices are gone. Pour the milk over the potatoes. Add remaining butter on top. Bake for one hour or until done.
